The Egg & I Now Serving Lunch, Breakfast in Chesterfield

The city's newest diner is the company's second location in the St. Louis area.

Chesterfield’s newest diner, breakfast-and-lunch focused The Egg & I officially opened Monday as the franchise expands its operations in the St. Louis area.

Located next to Starbucks in the Dierbergs Markets Shopping Plaza on Clarkson Road, The Egg & I will be open from 6 a.m. to 2 p.m. Monday-Thursday with its hours extended to 2:30 p.m. on Friday.

Patch caught up late Tuesday morning with owner Robert Gombas, who said they had received a great reception from customers during their first few days.

Gombas attributed it in part to the company's emphasis on creating a friendly, “family-focused” environment for restaurant goers. He also noted that by focusing on the breakfast and lunch crowd, they had a distinct advantage over other restaurants.

"When our customers come in, they are in a good mood," he said, joking that they hadn't yet been cut-off in traffic or dealt with the day's annoyances.

The restaurant held a “soft opening” on Sunday for friends and families with 100 percent of the proceeds donated to Backstoppers and estimated it would raise around $3,500.

A non-for-profit organization, Backstoppers is dedicated to supporting the families of public safety officers who are killed in the line of duty or suffer catastrophic injury.

The Chesterfield location is the second in the St. Louis area, with the first in Des Peres. Gombas previously told Patch that he and his business partners plan to open a total of seven restaurants in the metro region.

Nationwide, it marks the 79th location for the chain, which Gombas said started out in Fort Collins, Colo., as an upscale breakfast-and-lunch restaurant 25 years ago. 

Gombas recommended curious diners trying out their large selection of Eggs Benedict, which come in a variety of styles from Traditional to New Orleans, or a half salad/half sandwich combo if they are stopping in for lunch.
