Seafood Delight: Mexican Style

As the weather starts to warm up, we’re thinking seafood, but better yet, seafood Fiesta! Modern Mexican Cuisine style. Let’s bring the fresh catch taste to your kitchen with this Burrito Del Mar recipe!

Burrito Del Mar

Serves 3

½ lb of fresh shrimp

Fresh Scallops

Fresh Crabmeat

2 tbsp. of butter

2/3 cups flour

1/3 cup sliced onions

3 cups milk

1 cup salsa

1tbsp jalapeno chiles

2 cups bell peppers chopped

2 cups rice

Lettuce

Sour cream

12” tortillas

Cheese to top

Melt  2 tbsp. of butter in a sauce pan adding 1 tsp salt. Once the butter has melted, add the onions and the pepper, sauté until soft. Once the onions and peppers have finished cooking, remove them from the heat and blend in the flour to make a roux. 

Stir the mixture until smooth and return the heat, add the milk, salsa and jalapenos. Make sure the mixture is completely smooth and no flour lumps are visible.  As the sauce starts to thicken, gently add your seafood into the liquid and allow it cook. After the seafood has finished cooking, spoon into a tortilla, top with cheese and enjoy!
