The new breakfast-and-lunch diner scheduled to move into the former Veritas space along Clarkson Road now has a opening date. The Egg & I is set to open April 29, and managers there are starting to recruit employees for the new restaurant, which would be the second one in the franchise to open in the St. Louis area. News first broke about the restaurant, which generally closes mid-afternoon each day after the lunch rush, in January. The news of the new restaurant at 1722 Clarkson Road came a few weeks after Veritas moved out for a new location in Ellisville.
