With nearly 20 years of experience working every position in the restaurant from dishwashing to ownership, Rogelio Aguirre is Executive Chef and owner of Fiesta Modern Mexican Cuisine, located in the heart of Chesterfield.  At Fiesta, Chef Aguirre steps back into the kitchen perfecting the dishes of his childhood to bring West County diners authentic traditional Mexican fare.

Chef Aguirre came to the U.S. with his family when he was 11 years old from a town outside of Guadalajara, Mexico known for its tequila and mariachi music, as well as breeding U.S. restaurateurs.  His father, who had been working with food in the U.S. since he was 17, moved the family to a small town in Ohio, where they opened two successful maguey-style restaurants.  Chef Aguirre started out washing dishes, but by 15 he was already a prep cook for his father.  By the time he reached 18 he was considered a chef, and at 21 he was a minority owner in both restaurants. 

Today at Fiesta, Chef Aguirre continues to be inspired by his father’s culinary talent, focusing the menu on traditional Mexican recipes and techniques, such as alambres, posole, homemade chorizo and barbacoa.

Prior to opening Fiesta, Chef Aguirre began his St. Louis career managing and operating Iggy’s Mexican Cantina, where his brother was also working.  After a year, he moved on to manage the popular El Maguey in West County for a couple years.
